About Clover Hill
Established in the 1980s, Clover Hill is one of Australia’s very few premium sparkling houses solely producing sparkling wines in the traditional method. As of 2024, the Rose MV is produced from their vineyard holdings in the Pyrenees in Western Victoria.
Production note
54% Chardonnay, 43% Pinot Noir, 3% Pinot Meunier. The winemakers used classic techniques, such as delicate grape handling, followed by cool temperature alcoholic fermentation, and then a partial malolactic fermentation to soften the natural acidity of the grapes. Clover Hill Cuvée MV Rosé iscrafted according to traditional methods. Fermented in the bottle, this wine is aged on yeast lees for a minimum of two years. Residual Sugar: 6 g/L.
