About Clover Hill
Established in the 1980s, Clover Hill is one of Australia’s very few premium sparkling houses solely producing sparkling wines in the traditional method. This wine, as of 2024, is sourced from the winery’s holdings in the Pyrenees in Western Victoria.
Production note
The Clover Hill Pyrenees Cuvée MV (multi-vintage) is an assemblage of three prior vintages that have undergone partial malolactic fermentation to soften the crisp natural acidity. This cuvée is crafted according to traditional methods. Fermented in its bottle, this wine is aged on yeast lees for at least two years.
